Vegetables are the leaves, stems, or roots of plants that we can eat. Some vegetables grow aboveground, such as cabbage. Other vegetables grow underground, such as carrots. Some foods that we call vegetables are really fruits. Cucumbers, pumpkins, tomatoes are all fruits. They have seeds, while true vegetables do not. Eating vegetables is good for us. They contain water, vitamins and minerals.
